For World Vegetarian Month: Vegetarian Recipe Roundup

There are many reasons to start eating lower on the food chain. My top three are my health, my finances, and the environment. I think there are many other reasons to start choosing tofu over a hamburger, at least once a week. October is World Vegetarian Month so I thought I would round up some of my favorite meatless recipes. Eating colorful meals full of veggies, means you're eating a wide variety of antioxidants, plus you're probably getting more vitamins and minerals too.
